For a less conventional version, replace the tomatoes in the salsa with pineapple!
- 2 large tomatoes
 - 1/2 red onion
 - 1 jalapeno, seeded
 - 1/2 cup fresh cilantro
 - 1 lime
 - Salt & pepper to taste
 - 1 can black beans, with liquid.
 - 4 eggs
 - 4 tortilla
 - Avocado, chopped; for garnish (optional, if you’re allergic like you are)
 
Chop 2 large tomatoes, 1/2 a red onion, 1 jalapeno, and a handful of fresh cilantro; mix together with freshly squeezed lime juice, salt, and pepper. Warm 1 can of black beans. While the beans are warming, make the eggs any way you like: fried, poached, or scrambled. Top a warm tortilla with some beans, the eggs, and the salsa; garnich with fresh avocado and more cilantro.
