Makes 4 servings

Ingredients:

  • 1 regular box plain couscous, cooked & prepared as directed
  • 1/4 tsp. black pepper
  • 2-3 Tbl. lemon juice (from 1 lemon)
  • 3 Tbl. olive oil
  • 5 green onions, sliced
  • 1 orange bell pepper
  • 1/2 cup kalamata olives, chopped roughly
  • 1/2 cup sundried tomatoes, drained of oil
  • 1/3 cup crumbled feta cheese
  • 2 chicken breasts, cooked (grilled!) & cut into bite-sized pcs.

    Instructions:

    1. Combine all the ingredients and let them meld together about 30 mins. Then serve.
