Makes 4 servings
Ingredients:
- 1 regular box plain couscous, cooked & prepared as directed
- 1/4 tsp. black pepper
- 2-3 Tbl. lemon juice (from 1 lemon)
- 3 Tbl. olive oil
- 5 green onions, sliced
- 1 orange bell pepper
- 1/2 cup kalamata olives, chopped roughly
- 1/2 cup sundried tomatoes, drained of oil
- 1/3 cup crumbled feta cheese
- 2 chicken breasts, cooked (grilled!) & cut into bite-sized pcs.
Instructions:
- Combine all the ingredients and let them meld together about 30 mins. Then serve.
