2 cups (16 oz. bag) pecan halves
2 cups (16 oz. bag) whole almonds, roasted & salted
2-3/4 tsp. cinnamon
3/4 tsp. fine sea salt (optional)
1-1/2 tsp. vanilla extract
Preheat oven to 375°F. Place nuts in single layer onto a rimmed baking sheet. Roast nuts for 10-12 minutes, stirring halfway through cooking cycle.
Cool nuts slightly, but while still warm, add to large food processor with the rest of the ingredients. Process nuts, scraping down sides if necessary, until the consistency of peanut butter. This can take up to 10 minutes so be patient.
